Romeoville residents will soon be able to get a taste of a true central Texas barbecue.
Doc Watson's Smokehouse is set to open on Saturday.
The restaurant owner Chris Kawa said the place is named after his Uncle Doc, who was from Kentucky.
"My uncle told me that the key to good barbecue is to cook it low and slow," Kawa said.
Kawa learned from his uncle and from traveling to smokehouses in Dallas, Texas. He employs the same technique for his smoke meats.
Doc Watson's Smokehouse will have six menu items available every day including brisket, chicken, baby back ribs, pulled pork, turkey legs and smoked sausage. They'll have specialty items for each day, which will include options like beef ribs, pork chops, wings and burnt ends.
He's in the process of applying for a liquor license, which should come in the next month, so he can serve craft and domestic beer and wine. They will also add a patio next spring for outside seating.
It will be open Wednesdays through Sundays from 11 a.m. until sold out. It will be closed on Mondays and Tuesday.
Doc Watson's Smokehouse is located at 444 North Weber Road in Romeoville.
